I was so happy when I saw one of the episode of the Food Network Chanel showing how to bake the spritz cookies. I remember when I was a little that we used to bake a big batch especially if there's a special occasion. I googled right away the recipe and I found one from <a href="http://www.joyofbaking.com/SpritzCookies.html" target="_blank">Joy of Baking</a>. I tried it for the first time and it was a success :-)<br />
<br />
I will share you the recipe for you to try.<br />
<br />
Ingredients:<br />
<br />
1 cup unsalted butter, room temperature<br />
1/2 cup granulated white sugar<br />
1 large egg<br />
1 1/2 teaspoons pure vanilla extract<br />
2 1/4 cups all purpose flour<br />
1/4 teaspoon salt<br />
<br />
Garnish:<br />
Candied cherries, nuts, colored sprinkles or colored sugar<br />
<br />
Procedures:<br />
Preheat oven to 350 degrees F (177 degrees C) and place rack in center of oven. You will need two ungreased baking sheets.<br />
<br />
In the bowl of your electric mixer or with a hand mixer, beat the butter and sugar until fluffy (2-3 minutes). Add the egg and vanilla extract and beat until incorporated. On low speed, gradually add the flour and salt and mix until incorporated.<br />
<br />
TO PRESS COOKIES:<br />
Scrape some of the dough into your cookie press that has been fitted with a decorative plate. Hold the cookie press perpendicular to the ungreased baking sheet, with the tip almost touching the sheet, and squeeze and trigger. ( if you find the dough is too soft, because the shape of the cookies is not clearly define, then chill the dough). Continue to press out the cookies, spacing about 1 inch apart. If desired, decorate the cookies with pieces of candied cherries, nuts, colored sprinkles or colored sugar.<br />
<br />
TO PIPE COOKIES:<br />
Have ready a pastry bag fitted with a 1/2 inch diameter open star tip. Fill the pastry bag about half full, twist the end of the bag to close and pipe 1 1/2 inch rosettes or stars by holding the pastry bag perpendicular to the ungreased baking sheet, with the tip almost touching the sheet. Squeeze the pastry bag firmly and evenly without moving it until the shape is the desired size. Stop squeezing and push the pasty bag down a little and lift the pastry bag straight up. Continue to pipe cookies, spacing about 1 inch apart. If desired, decorate the cookies with pieces of candied cherries, nuts, colored sprinkles or colored sugar.<br />
<br />
Bake cookies for about 6-9 minutes or just until the edges of the cookies are barely tinged with brown. Remove from oven and gently transfer the cookies to the wire rack to cool completely. These cookies will keep at room temperature for about 1 week or they can be frozen for several months.<br />

This is my first try of chocolate crinkles. I been thinking to making some before but I didn't have the guts to do it because I'm so afraid that it will not be successful until I tried last december. I thought it's complicated when I read the recipe but it isn't. Everybody loves it and I did many times already since december.</div>

Ingredients:</div>

2 cups all-purpose flour, sifted</div>
<div style="text-align: left;">
1/2 cup unsalted butter, softened</div>
<div style="text-align: left;">
1 1/4 cup granulated sugar</div>
<div style="text-align: left;">
4 pieces raw eggs</div>
<div style="text-align: left;">
1 tbsp vanilla essence</div>
<div style="text-align: left;">
4 ounces semi-sweet chocolate chips, melted</div>
<div style="text-align: left;">
2/3 cups unsweetened cocoa powder</div>
<div style="text-align: left;">
1/2 teaspoon salt</div>
<div style="text-align: left;">
1 teaspoon baking powder</div>
<div style="text-align: left;">
1 cup confectioners sugar</div>

Cooking Procedure:</div>

<ol>
<li style="text-align: left;">Cream the butter in a mixing bowl using an electric mixer</li>
<li style="text-align: left;">Whisk the granulated sugar in and continue mixing for 2 minutes</li>
<li style="text-align: left;">Add the cocoa powder and melted chocolate then mix again for a minute</li>
<li style="text-align: left;">Put-in the eggs and vanilla essence then continue to mix until the texture becomes fluffy</li>
<li style="text-align: left;">Add-in the flour, salt, and baking powder then mix again until all the ingredients are evenly distributed</li>
<li style="text-align: left;">Cover the mixing bowl with cling wrap and refrigerate for at least 3 hours</li>
<li style="text-align: left;">Remove the cover and scoop the mixture using 1/2 tbsp measuring spoon</li>
<li style="text-align: left;">Roll the mixture using your palms until the shape becomes spherical</li>
<li style="text-align: left;">Roll the chocolate balls over confectioners sugar until fully covered</li>
<li style="text-align: left;">Arrange on a baking tray with wax paper (each ball should be 2-3 inches apart)</li>
<li style="text-align: left;">Preheat oven to 350 degrees Fahrenheit and bake the chocolate balls for 10 to 12 minutes</li>
<li style="text-align: left;">Remove from the oven and allow to cool down</li>
<li style="text-align: left;">Arrange in a serving platter then serve. Share and enjoy!</li>

I cooked roasted pork, roasted vegetable and cheescake for the dessert. Roast uncovered for 15 mins, then reduce oven temperature to 350 F, roasting for about 75 mins, until an internal temperature of 175 F is reached. Removed roast from pan and let rest on a cutting board or platter for 15 minutes before slicing.</span></li><li><span style="font-family:verdana;color:#009900;">For pan juices, remove orange segments, thyme and sage sprigs and discard. It's been long that I didn't post any recipe here. It's not because I didn't do any but it's just that I been too busy in the last few months. Now, I find time to post. I made this muffin a while ago. The photo above is freshly taken by me. I just took it from the oven :-)<br /><br />Hubby bought a lot of strawberries. It's a freshly picked berries. I don't know what to do with it. We are only 2 here in the house and we can't eat them all. So what I did, I check in the internet for a recipe that I can use the strawberries. The recipe that I used was taken from <a href="http://www.joyofbaking.com">Joy of Baking.</a><br /><br />Here is the recipe:<br /><br /> 1/2 cup unsalted butter, melted<br /> 3/4 cup light brown sugar<br /> 2 large eggs, lightly beaten<br /> 1 teaspoon pure vanilla extract<br /> 2 large ripe bananas, mashed<br /> 1 cup fresh berries (cut into small pieces)<br /> 2 1/4 cups all-purpose flour<br /> 1 1/2 teaspoon baking powder<br /> 1/4 teaspoon baking soda<br /> 1 teaspoon ground cinnamon<br /> 1/2 teaspoon salt<br /><br />Procedure:<br /><br />* Preheat oven to 350 degrees F. Position rack in center of oven. Line the muffin pan with paper liners or grease with butter or a baking spray. Set aside.<br /><br />* In a small saucepan, melt the butter. Set aside.<br /><br />* In a medium sized bowl, whisk together the brown sugar, eggs, vanilla extract and mashed banana. Add the melted butter to the brown sugar mixture and stir to combine.<br /><br />* In other large bowl, combine the flour, baking powder, baking soda, cinnamon and salt. Gently fold in the berries, making sure they are coated with flour. This helps to prevent the berries from sinking during baking. Do not over mix or the berries will end up coloring the batter. Add the wet ingredients to the dry ingredients and stir only until the ingredients are just combined. Do not over mix the batter or tough muffins will result.<br /><br />* Fill each muffin cup about two thirds full of batter, using two spoon or an ice cream scoop. Fill any unused muffin cups halfway with water to prevent warping of the pan and or over browning of the muffins. Place in the oven and bake until a tester inserted in the center of a muffin comes out clean 20 to 25 minutes. Transfer to a wire rack to cool.<br /><br />Make 12 regular sized muffins. And the weather is so nice and we eat outside in our patio. The photo is originally taken by me but this recipe is courtesy of Giada De Laurentiis that i took from the foodnetwork.com. </span></span><br /><span style="font-size:130%;color:#ff0000;"></span><br /><span style="font-size:130%;color:#ff0000;">1/4 cup chopped fresh thyme leaves </span><br /><span style="font-size:130%;color:#ff0000;">1/4 cup chopped fresh parsley leaves </span><br /><span style="font-size:130%;color:#ff0000;">3 cloves garlic, minced </span><br /><span style="font-size:130%;color:#ff0000;">1 teaspoon fennel seeds 1</span><br /><span style="font-size:130%;color:#ff0000;">/4 teaspoon red pepper flakes </span><br /><span style="font-size:130%;color:#ff0000;">Kosher salt </span><br /><span style="font-size:130%;color:#ff0000;">Freshly ground black pepper </span><br /><span style="font-size:130%;color:#ff0000;">3 boneless, skin-on chicken breasts </span><br /><span style="font-size:130%;color:#ff0000;">3 bone-in, skin-on thighs </span><br /><span style="font-size:130%;color:#ff0000;">3 tablespoons olive oil </span><br /><span style="font-size:130%;color:#ff0000;">1 tablespoon butter </span><br /><span style="font-size:130%;color:#ff0000;">6 cipollini onions, trimmed and peeled </span><br /><span style="font-size:130%;color:#ff0000;">8 ounces baby carrots, peeled and trimmed, but leaving on a bit of green tip </span><br /><span style="font-size:130%;color:#ff0000;">1 cup chicken broth </span><br /><span style="font-size:130%;color:#ff0000;">6 ounces snap peas, trimmed </span><br /><span style="font-size:130%;color:#ff0000;">4 ounces morel mushrooms<br /></span><br /><span style="font-size:130%;color:#ff0000;">*Preheat the oven to 375 degrees F.<br />*In a small bowl combine the thyme, parsley, garlic, fennel seeds, red pepper flakes, and a pinch of salt and pepper. Stir to combine. Place the chicken pieces on a work surface. Gently loosen the skin of the chicken and push the herb mixture under the skin. Season the chicken all over with salt and pepper.<br />*Warm the olive oil in a large skillet over medium-high heat. Place the chicken in the pan, skin side down, when the oil is hot. Cook until the skin is crispy and golden, about 5 minutes. Turn the chicken and cook the same way on the other side. Turn the heat off the pan and reserve. Transfer the chicken to a baking dish, skin side up again, and finish cooking in the oven, about 15 minutes.<br />*Meanwhile return the same pan to medium heat. Add 1 tablespoon of the butter. When the butter has melted add the cipollini onions and carrots. Sprinkle with salt and pepper. Cook until tender and golden in places, about 7 minutes. Add the chicken broth and scrape any brown bits off the bottom of the pan with a wooden spoon. Add the snap peas and mushrooms. Simmer over low heat until the vegetables are tender and the liquid has reduced by half, about 5 minutes. Season with salt and pepper, if necessary.<br />*Remove the chicken from the oven. Spoon the vegetables onto a serving platter along with the chicken. Spoon the sauce over the chicken. I’m back! Sorry for the long absence. As I mentioned before, I was sick and advised by the doctor to have a complete bed rest. But because I’m a hard headed person, I didn’t follow what the doctor said. The pain in my lower back was getting worst. And now, I have no choice, I have to stop schooling. Hubby was very caring to me. He’s always looking after me. He installed me in the bed and make sure I’m comfortable and my laptop next to me. Thought I have my laptop with me, I can’t update my blog because he don’t want me to work with my computer. All I did was watched tagalog movies from <a href="http://www.pinoychannel.com/">www.pinoychannel.com</a> and my favourite teleserye LOBO. The good rest really helps me a lot. Now, I feel better. I can set in the sofa without pain in my back. Hubby don't like if I eat a lot of sweets especially chocolate cake and chocolate ice cream. I have a gallon of chocolate ice cream in the freezer. A month ago, I made a chocolate cake. It's a simple one that i made the recipe. Too bad, I didn't write it down the recipe.<br /><br />Last week, I was in Montreal for a week and I was craving for a chocolate cake again. I drove to the grocery store right away and bought the ingredients that i will need for my chocolate cake. I was so happy that I had a successful result. Heat oven to 350 F. Grease two 9 inches round baking pans. Line bottoms with wax paper; grease and flour paper. Mix cocoa with boiling water in small bowl; stir until smooth. Set aside to cool.<br /><br />2. Beat butter and sugar in large bowl until fluffy. Add eggs, one at at a time, beating well after each addition. Stir in vanilla. Gradually add cocoa mixture, beating well.<br /><br />3. Stir together flour, baking soda, and salt; add alternately with milk and sour cream to batter mixture, beating until blended. Pour batter into prepared pans.<br /><br />4. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes. Remove from pans to wire racks; carefully peel off wax paper. Cool completely. I made this last night and we eat tonight as our dessert. And it taste really good so I decided to post it here and share with you. Add soy sauce or salt, and pepper to taste. Put a one table spoon lump of meat mixture in the middle of the wrapper. Flatten mixture. Roll wrapper like a log the size of a your thumb. I made this by myself. I want to share to you the recipe of this cake in case you want to make some for you :-)<br /><br />Ingredients:<br /><br />2 pkgs casava, defrosted (frozen, grated from the Asian store)<br />1 can coconut milk<br />1 egg<br />1 cup sugar<br />1/2 can of condensed milk<br /><br />Instructions:<br /><br />Mix all the ingredients together, except for the condensed milk. Put mixture in a rectangular pan and cook in a 350 degree oven for 50-60 minutes.<br /><br />After 45 minutes of baking, pour 1/2 can of condensed milk on top of casava cake and spread. Put back in the oven for another 20 minutes or until top has browned.<br /><br />Let it cool and serve.
